How can I help this girl from being used as a pack mule?

its very good that you are going to help her. try to talk to her some more and give her some attention. talk to her and tell her to stick up for yourself and just ignore the other girl.stick up for her too. just talk to her. you never know you and the shy girl could become really good friends:)
